Thursday Plan

White Bean Chicken Chili

2-3 c cooked chicken, off the bone
1 large can chicken broth~more if needed
1 can diced chilies
2 c soaked overnight white beans
1 tsp cumin
1 tsp oregano
1 tbsp salt
2-3 stalks celery, chopped
1 onion, chopped
4 cloves garlic, minced
cilantro or parsley

Cook beans in 1 inch water and 1 tbsp salt for 3 hours on high.

Saute celery, onion and garlic until soft. Add everything except cilantro or parsley to crockpot. Cook on high another 2 hours.

When done stir in cilantro or parsley. Top with sour cream and monterey jack cheese. You can also add some chopped green onions on top for crunch.
