First Salad of the Season

Sunny and 78!

That's what is was here today.  That's what I request when I put my order in for the summer.  I didn't even mind driving around all afternoon.  Music lessons, Farmer's Market, Sander's Farm, Produce Depot, bank & the post office.  I even had time to make it home and plant a few more pepper plants and do some weeding. 

While we were out I got a special treat from Produce Depot.  Rice Milk Limeade.

Honey
Rice Milk
Ice

Just what a sunny 78 degree day deserves!  Dinner was simple and I even heard the boys claim great dinner mom.  Though I was scared for a moment it wasn't going to be enough.

Our first baby spinach & baby romaine salad from the garden with dried cranberries, almonds, Asian dressing and fresh grated Parmesan. Chickpeas and coconut rice.

That salad looks beautiful! The first day of June brought 54F and rain for Seattle. Oh well, at least we don't have to pay for air conditioning!

My order has been placed for 70 degree weather also! lol! too bad it's 90 here today and humid! The salad looks amazing. I love what you can do with chick peas but not much for them on my salad. Are they dfferent fresh, I just have got the canned kinds???? Thanks for linking up with Helthy 2day Wednesdays! See you next week!

I do buy dry beans and make them and I DO think they are different. They aren't mushy and they have a taste ;)
