Bean night.
Black beans & rice. Drain your beans from soaking overnight. Add them to the crockpot, cover with water and cook 4 hours on high.
Then add:
1 onion, chopped
3 carrots, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1/2 tsp cumin
1 1/2 tsp dry basil
1/2 tsp chili powder
1/2 tsp dry oregano
pepper flakes
1 can crushed tomatoes
Cook on high for another 3 -4 hours.
Serve on top of rice in a bowl. Top with cheese and sour cream.
