Rainy Days

One rainy Sunday when I was in the third grade, I picked up a book to look at the pictures and discovered that even though I did not want to, I was reading. I have been a reader ever since.

It sure has been a rainy spring here in the northwest part of Indiana.  I really don't mind them, rainy days.  Life can be so busy with school, cooking dinner, planning the menu, running to music lessons, the dentist, the orthodontist, church, grocery shopping.  When I get a chance to sit down I sometimes feel guilty that I should be off doing something.  But for some odd reason when it rains and the calmness comes over me and I relax I don't feel guilty.  I think God intends it that way. 

Before you think this is about what electric blanket I used to snuggle up with today it didn't happen.  I did relax though and I am still in my sweat pants, hair undone.  I made ice cream and granola today.  I like to have a stash of snacks ready so we are less likely to crave not so good for you snacks.  I know everyone and their mother has a granola recipe but I am still going to share mine with you.  I hope you will also share yours!

I am fortunate enough to have a friend who runs a food coop.  We order once a month and I keep a stocked pantry with many staples.  Like unsweetened coconut, walnuts and oats.

In a big bowl combine 6 cups rolled oats, 2 cups unsweetened coconut & 2 cups walnut pieces.


I use coconut oil.  You can use canola oil but if you do some research you will find that coconut oil is very good for you.  Add to a saucepan 1/3 cup coconut oil, 1/2 cup brown sugar, 1/2 cup peanut butter, 1/2 cup honey, 2 tsp. cinnamon & 1 tsp. vanilla.  Stir over medium heat until melted and smooth.



Yes, lick the cup!  It's peanut butter for goodness sake.


Heat the oven to 325.  Line a sheet pan with parchment paper and cook for about 50 minutes, stirring every 10.

Mmm. That looks delicious. I like granola a lot, and this looks as if it would be a nice switchup from my usual.
