Memorial Day

Hooray the sun is here and man is it going to be HOT, but I am not complaining!  We are also not going to make a trip to the beach today, though that is where I want to be.  It will just be to crowded and I am not ready to be sunburned in all my white places ;)

We are staying home and working.  Remember the new house, the garden, chickens and weeding that has gotten away from me since we have had so many rainy days?  That is what we will be doing especially since Tom is home and willing.  I can use any extra hands I can get! 

There will be grilling of hamburgers, potato salad and good old strawberry pretzel salad.  You know the one.  The one at every pot luck in America.  Here is the recipe for this beautiful Memorial Day.  Celebrate and give thanks always for everything.  God bless!


Strawberry Pretzel Salad
2 cups crushed pretzels
3/4 cup butter, melted
3 tablespoons white sugar ( I cut back to 2)

1 (8 ounce) package cream cheese, softened
1 cup white sugar (I cut back to 3/4c)
1 (8 ounce) container frozen whipped topping, thawed

2 (3 ounce) packages strawberry flavored gelatin
2 cups boiling water
2 (10 ounce) packages frozen strawberries

Directions

1.Preheat oven to 400 degrees F (200 degrees C).

2.Stir together crushed pretzels, melted butter and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9x13 inch baking dish.

3.Bake 8 to 10 minutes, until set. Set aside to cool.

4.In a large mixing bowl cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust.

5.Dissolve gelatin in boiling water. Stir in still frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.
